What is Santa Maria Style Barbecue?
Traditional Santa Maria style BBQ means cooking over red oak wood with a dry rub seasoning consisting of mainly salt, pepper, and garlic. The red oak provides a smoky flavor without overpowering meat and is cooked medium to medium-rare.

How soon should we reserve date?
As soon as possible and with a 50% deposit.

Our minimum is 50 guests.

When do you need the final headcount?
48 hours prior to the event.

What time will the crew arrive and start cooking?
We arrive 2-3 hours prior to your service time

What area do you need to set up for cooking?
We will need a flat area to park the grill and a 10x10 area for prepping.

How is the food served?
Buffet style. We provide metal utensils for serving.

Who provides the tables for the buffet?
The customer is to provide two six-foot tables and tablecloths for coverage.
On-Site Catering Requirements
In preparation for your special event, we will conduct an on-site inspection of the cooking area to make sure we fit in the area assigned.
The cooking area requires a flat area equal to the size of 2 to 3 standard parking spaces
All meats are cooked at your location over red-oak wood and grilled on an authentic
Santa Maria Style pit.
The buffet service time is one hour. Longer service times can be arranged for an additional charge.
